This Whimsy is a 4 barrel co-fermentation of 77% Chardonnay, 18% Semillon and 5% Muscat, handpicked from our organic and biodynamic vineyard. Gently pressed together and racked to barrels for indigenous fermentation, MLF and aging. The wines spent 12 months, on lees, in 78% Stainless Barrels and 22% neutral French oak to support the balance of fruit in this unique Winemakers' blend and not overpower it with new oak.
This wine presents a perfumed nose of fresh quince, green apple and pear, with a note of lime zest and an underlying fresh bread leesy richness.
The palate has a lively acidity and fruitiness along with a broad palate and persistent finish.
