Chardonnay is truly one of the great grape varieties produced in Niagara, and our example from our Triomphe line is an excellent place to start.
The organic grapes from both the Saunders and Sabourin vineyards were handpicked, sorted and gently whole cluster pressed to extract the juice which was cool settled and racked to 100% French cooperage for fermentation and lees aging over a period of 12 months prior to barrel selection, blending, light bentonite fining and bottling.
Youthful nose of orchard fruit, wet stone and smoky / toasty character.
Fresh acidity on entry, with creamy pear purée flavour and texture. Medium plus length driven by fruit, mineral, tangy acidity and leesy notes.
Serve with bloomy-rind cheeses, creamy seafood, roasted chicken and roast pork with apples.
