Chardonnay is truly one of the great grape varieties produced in Niagara, and our example from our Triomphe line is an excellent place to start.
Organic grapes were harvested from 5 vineyards including: Laundry, Southbrook, Sabourin, Reimer and Saunders. Gently pressed and cool settled prior to racking to a combination of stainless steel tanks or french oak cooperage for either indigenous fermentation or inoculation with cultured yeast. All vineyard lots were kept on fine lees and tasted for blending following 6 months of aging. Lightly bentonite fined and bottled.
Nose is fresh, presenting notes of pear, yellow plum, and apple wrapped in a subtle blanket of vanilla.
The palate shows the same fruit as the nose with a lively, balanced mouthfeel, medium long finish and refreshing acidity.
