Grapes were hand harvested from the estate vineyard and cluster sorted before destemming and crushing 50% to stainless steel and oak vats for fermentation. Saignee of estate Cabernet Franc and Sauvignon lots removed after 24 hours of skin maceration and blended with non-estate. Machine picked/pressed juice for indigenous fermentation over 5 weeks. Bentonite fining used prior to sterile filtration and bottling.
