Sauvignon Blanc 2015Tasting Notes A grape with a zesty attitude, we are simply wild for this “wild white”, that originates from Bordeaux. This vintage exhibits energizing aromas of passion fruit, gooseberry and fresh squeezed citrus. A roundness on the palate shows summer fruit flavours of stone fruit and succulent citrus, finishing with a refreshing crispness. A clean, invigorating wine that is fantastic on its own or enjoyed with summer salads, creamy chèvre or fresh fish — we like Pacific Halibut with Grapefruit Beurre Blanc.
The Sauvignon Blanc was one of our earliest varieties to be picked and 2012 saw a return to normal growing conditions for our region. After a good summer with moderate heat and plenty of sunshine, we harvested over two days beginning on October 3rd under ideal, cool dry skies. The grapes arrived at the winery in splendid condition with an excellent balance of sugar and acidity. They were immediately crushed and pressed and then underwent a slow cold ferment.
The ideal 2012 growing conditions provided us with fruit with plenty of roundness and excellent mouthfeel. We chose 100% tank fermentation to enable the classic Sauvignon Blanc flavours to really shine through. We utilize two to three yeasts for added dimension to the wine. A single clone Sauvignon Blanc from UC Davis contributes pleasant tropical and flint aspects. The Muscat adds elegance and softness to the palate along with an aromatic depth.
The aromas of kiwi, gooseberry, passion fruit and citrus dominate the nose.
The flavours combine lemon, peach and crisp apple.
A fine accompaniment to pan-seared scallops or a bucket of fresh steamed mussels.
