The bull, symbol of strength, inspired the name of this limited edition red wine – TAURUS by Benjamin Bridge – conveying the strength and passion of our commitment to handcrafting superior wines that express our true terroir.
Winemakers Peter J. Gamble and Jean-Benoit Deslauriers crafted fewer than 100 cases of this limited edition red, made from 100% Maréchal Foch. TAURUS displays an opaque purple colour so deep it borders on pure black. On the nose, a very earthy bouquet gains complexity from hints of black cherries, oregano and rose petals. On the palate, the wine shows great concentration and density, while remaining elegant and sophisticated.
Organically farmed on the lower, south-facing slopes of our Gaspereau Valley vineyard, Foch grapes were hand harvested and cluster sorted, and then underwent a long, slow maceration, fermentation and aging in American oak for 24 months.
Owing to its delicate tannins, this versatile red wine pairs well with a wide range of meats and vegetarian entrées or can be savoured on its own.
