After hand harvesting our Sauvignon Blanc grapes were pressed immediately to minimise skin contact and juice deterioration. This gentle approach permitted the juice to clarify naturally and slowly. After settling, the juice was fermented using selected yeast in stainless steel at cool temperatures retaining fruit flavour and freshness.
