This is our fourth vintage of this Blanc de Blanc traditional method sparkling wine from the certified organic and biodynamic David's Block. Only released every 2 years to allow longer aging time, this premium Spark spent 4 years on lees. The result is a delightful wine with aromatic notes of apple, pear and a hint of toast. On the palate, the mousse is elegant and there are lovely notes of brioche, shortbread and apple pie.
Sparkling wine is extremely versatile and as such, a pleasure to pair. Try the 2011 David's Block Spark with oysters, mussels in a white cream sauce or a fig and goat cheese tart.
