1/3 was fermented in stainless steel using non-selected (wild) yeast and 2/3 was fermented in French oak puncheons (500L barrels) using non-selected yeast. Both were used in these vessels for 18 months prior to blending together in stainless steel.

Tropical fruit carries through to palate, linked to together by electric acidity strung together with salt and mineral notes. Layered texture of finely folded tropical fruit and herbaceous nuances.
