The 2007 Pinot Noir grown in nearly drought like conditions, rustling in small yields but rich rewards a rich fruity wine with a tannic structure that is sure to be long-lived.
The fruit was de-stemmed and lightly crushed into open top tanks, leaving much of the fruit as whole berries. Grapes were left to cold soak prior to being inoculated to enhance body and secure fruit. During fermentation, the skins of the berries were punched down 4 times a day to extract colour, flavour and tannin. Once fermentation was completed, the wine was pressed off the skins and moved to French oak barrels for Malolactic fermentation and continued aging.
Like all vintages the 2007 was hand harvested in early October 2007.
Full-bodied and firm, a distinctive Pinot. Tart red fruit, excellent acidity and a lingering finish.
