ll grapes were hand sorted, gently destemmed and left as whole berries for 48 hours to cold soak, extracting colour, flavour and tannins from the skins. the Pinot Noir was then fermented using both wild and select cultured yeasts. During its fermentation tanks were pumped-over four times daily to extract colour and flavour.
After fermentation the Pinot Noir was pressed off the skins and transferred to new French oak barrels and second fill American oak barrels for its aging. The result is a classically styled (Burgundian) Pinot Noir with character and cellaring potential.
Our 2007 Founder’s Select Pinot Noir is made with 100% handpicked grapes. Harvested in early October.
On the nose hints of strawberry and black cherry are met with cinnamon and allspice as this wine breathes.
Upon tasting the cherry and spices develop a stronger presence and are joined by anise, thyme, mushroom and forest floor characteristics.
Showing some maturity this garnet hued wine is holding on to its tannin structure and is exploding with character.
Decant this wine for 15-20 minutes before serving to have a truly exceptional tasting experience. Drink now or cellar until 2019.
