After careful selection, cluster sorting and gentle pressing of the chardonnay grapes, the juice was cool settled and racked to barrel. This 6 barrel blend of chardonnay from our organic and biodynamic estate spent 20 months in a selection of French Oak barrels (50% new). Primary fermentation and malolactic conversion were indigenous ("Wild Fermentation") and the wine was only lightly bentonite fined prior to bottling.
