2017 Dark Horse Frontenac Noir (Non-VQA)

Winemaking:

This wine is made from a blend of Frontenac Noir and Marquette grapes from our Kinburn Vineyard. After hand picking, gentle crushing and destemming, the primary fermentation on oak, with cultured yeast, took a total of 10 days before gentle pressing and an extended malolactic conversion over 2 months. The wine was then oak aged for a further 3 months prior to course filtration and bottling without fining. Do not chill to help avoid natural sediment formation.

Tasting Notes:

This wine is deep purple in colour. The nose shows dark fruit, blackberry, black cherry, earth, chocolate, and roasted coffee. The palette is dense, yet the balance of acidity, fruit, alcohol and tannin make this an unctuous experience. Persistent finish. Enjoy young.
