Cool stainless steel fermentation of all varietal lots with cultured yeast. Lots were carefully blended, lightly bentonite fined and then sterile filtered to bottle.
The nose presents notes of tropical fruit, with a fresh herbaceous note and bergamot.
Palate has a nice balance of acidity, sweetness and alcohol making it refreshing and cleansing. Refreshing on its own, and suits a range of food, from lightly dressed salads, seafood, poultry and spicy fare.
