Monteregie
Christian Barthomeuf is one of the most important figures of Québec viticulture and ice cider production. He was the founder of Côtes d’Ardoise in the early 1980s, one of Québec’s first artisanal wineries, and was the first to produce ice cider in 1990. Clos Saragnat’s orchard and vineyard are cultivated organically (using horses and electric carts to do the vineyard work), and indigenous yeasts are used to ferment the much-praised — and patiently aged — ice ciders, apéritif ciders and vins de paille.
