After careful selection, cluster sorting and gentle pressing of the chardonnay grapes, the juice was cool settled and racked to barrel. This single barrel of Chardonnay from our organic and biodynamic estate spent 11 months in a barrel constructed of oak cut on the appropriate biodynamic moon day for wine storage and aging. 100% new oak. Primary fermentation and malolactic conversion were indigenous and the wine was only lightly bentonite fined prior to bottling.
This bottling of a single barrel from Boutes cooperage that was constructed of oak harvested on the appropriate biodynamic day, shows a rich nose of butterscotch, vanilla and baked apple.
A palate that presents same, framed by good acidity and a finish that is long, and smoky.
