Below Black Sage Road between Oliver and Osoyoos, this vineyard has a gentle West-facing slope. Cerqueira Vineyard, Oliver, BC - Black Sage Gravel Bar. The soils are dense loam topsoil above gravel with limestone (calcium carbonate) covered granite cobbles throughout a deep profile. With the rough surface of the calcium carbonate, water stressed vine roots seek out these rocks for the small amount of water to be found on this surface.
Wild yeast fermentation. The fruit for this wine was harvested on Oct. 27, destemmed, and crushed with approximately 30% whole berries to small open top fermenters. Punchdowns were done twice per day for 27 days, with two delestage operations during that time. After this, maceration continued for another 10 days with a single punchdown per day. Both alcoholic and malolactic fermentations were completed on the skins. The wine was pressed in a small vertical basket press directly to neutral French, thin stave barrels. Ageing took place in these barrels for 14 months and the wine was bottled in April of 2015.
